MORMOR’S ORANGE CAKE RECIPE

 

 By far the most special recipes to me have always been ones that are passed down from loved ones. This Orange Cake recipe is one of those particularly special ones. It has been passed down from my Mormor (Danish for ‘mum’s mum’). She made it, my mum makes it, and my siblings and I now make it.

Mormor was an incredibly warm and loving person, and I think of her every time I bake this absolutely beautiful cake (though hers were somehow always more delicious than any I have ever made or will ever make!). A very simple recipe, but the magic is in the last couple of steps…

Method

CAKE

Cream the sugar and butter together, adding eggs one at the time.

Add the flour and beat well until a little fluffy.

Line a round baking tin with baking paper. Pour in mixture. Bake at 180 degrees celcius for 40 minutes or until lightly browned (better to let it be slightly underdone than overdone).

SYRUP

While baking, start on the syrup.

Juice the oranges and the lemon, and add the juice into a saucepan on low heat.

Add the sugar and keep stirring until eventually dissolved. Remove from heat, let cool.

Ingredients

CAKE

250 grams butter

250 grams sugar

250 grams regular flour

3 eggs


SYRUP

3 oranges

1 lemon

1/2 cup sugar

A sprinkle of orange rind (optional)



The last steps…

Once the cake has come out of the oven, poke holes in it using a metal or wooden thin skewer, all over the cake. Don’t forget the edges, and poke the holes right through until a fraction before they reach the bottom.

Pour the cooled syrup all over, letting it soak into the cake through the holes.

Serve warm. Add a spoonful of natural yoghurt if you wish!
